Easy Vanilla Pancake Recipe

My kids love pancakes, but what do you do if you run out of pancake mix? You come up with an easy vanilla pancake recipe that tastes even better than the boxed stuff.

I threw this recipe together one morning after discovering we were out of pancake mix. I had to do something. Five hungry children had already been promised a pancake breakfast and they weren’t taking “no” for an answer.

I had never made homemade pancakes before, so I did what every desperate mom does…I Googled it. There were so many recipes that looked really good, but I found different characteristics of each recipe that I thought would play well together. And they were ones I actually had on hand.

 

 

 

Easy Vanilla Pancake Recipe

Ingredients

Ingredients

  • 2 cups of self-rising flour
  • 1 1/2 tsps. of baking powder
  • 2 1/2 Tbsps. sugar
  • 1 1/2 - 1 3/4 cups of milk you may need a little more, batter tends to thicken slightly while sitting
  • 2 eggs
  • 1 1/2 tsps. of vanilla extract
  • 2 Tbsps. real melted butter
  • stick butter if cooking in a skillet
  • optional - pecans chocolate chips, berries, etc.

Instructions

Mixing the Ingredients

  • First, mix the flour, sugar, and baking powder together. You definitely don't want any lumps of baking powder in your batter.
  • Next, you're going to add in the milk, eggs, vanilla, and melted butter.
  • Blend together just until ingredients are mixed well together, there will be some lumps, so don't overmix trying to eliminate them all.
  • Fold in your optional goodies if you'd like.

Time to Cook

  • You may cook these delicious vanilla pancakes with vanilla goodness in a skillet or on a griddle. (If cooking in a skillet, you'll need more butter.)
  • I cook our pancakes on my large griddle. I wipe the griddle down with oil before heating on a medium-high setting.
  • Once the griddle is on, I wait until it's good and hot before putting down any batter. A good way to test this is to sprinkle drops of water on its surface. If the water dances, the griddle is ready.
  • I use a ladle to dip up my batter. It holds approximately 1/4 - 1/2 cup of batter. I pour the batter onto the hot surface, swirl the batter wider with the back of the ladle, and wait.
  • Your vanilla pancake is ready to flip when the surface of the batter is full of air bubbles.
  • Cook for about four or five minutes longer, or when the pancake is golden brown on both sides.

Notes

This recipe makes 12-14 pancakes. Top with your favorite syrup or fruit.
