Quick and Easy Chocolate Chip Cookie Recipe

When I was a little girl, my sisters and I would sometimes spend the weekend on the family farm with my grandmother, whom we called Mimi. She would let us do all kinds of things we couldn’t do at home. We’d walk along the road, an almost one-lane, orange chert, country road, and gather pine cones, leaves, or flowers depending on the season. Mimi would let us drive her prized, white and yellow, Cub Cadet Lawn Mower, help her with her mutton tallow business for a real paycheck, play in the shallows of the frigid Piney River, and explore the woods for wildflowers. But the one thing my grandmother ALWAYS let us do, that we didn’t do too much at home, was make chocolate chip cookies. A quick and easy chocolate chip cookie recipe wasn’t something we wanted back then. Little girls love to add the ingredients, to pour, sift, and stir. We had so much fun and made some wonderful memories.

As Mimi got older, she still enjoyed making cookies but liked a simpler approach. I’m not sure where she got this recipe, but she LOVED IT! She made these cookies often to take to Wednesday night prayer meeting and gave them to the children that attended.

I decided to use this recipe a few years ago, for some quick Christmas cookies for our neighbors, and have never looked back. It’s quick, easy, and the cookies are delicious!

 

 

Mimi's Quick and Easy Chocolate Chip Cookie Recipe

For our family, I double this recipe, and if I’m making them for a crowd, I quadruple it.

Ingredients

  • 1 pkg. white cake mix I use yellow, but you could use chocolate if you wanted
  • ½ c. vegetable oil I use Canola
  • 2 Tbsp. water
  • 2 eggs
  • 6 oz. semi-sweet chocolate chips about 1/2 a bag
  • ½ c. pecans chopped (optional)

Instructions

Directions

  • Preheat oven to 350°. Blend cake mix, oil, water, and eggs together. Stir in chocolate chips and nuts.
  • Bake for 10-12 minutes on an ungreased baking sheet. Cookies are done when edges start to turn brown. Top of cookies will be pale. Cool on wire rack.
