Slow Cooker Vegetable Beef Soup

For a very long time, I made easy vegetable beef soup on the stovetop until one day I decided to turn it into slow cooker vegetable beef soup. THE EASIEST VEGETABLE BEEF SOUP EVER! And it all came about because I was busy and didn’t want to babysit soup.

I hate babysitting a boiling pot of soup. So, one day I decided to see what would happen if I dumped all the ingredients for an easy vegetable beef soup into the slow cooker. I got a slow cooker vegetable beef soup that the whole family will eat and ask for seconds.

Around here, we call Sunday, Souper Sunday. It’s just easier to throw some ingredients into the slow cooker and walk away, than to stand over a stove all afternoon. I’m tired! Sunday is my day of rest.

On Sunday morning, I prep the Crock Pot, set and forget. When we get home from church, lunch is ready, and so is supper most of the time.

Soup is perfect for us because it goes a long way for a lot of hungry mouths. Most of the time, I can stretch it across two meals.

My 6-quart slow cooker holds all of this recipe, but just barely. If yours is smaller, you’ll need to adjust the recipe accordingly.


 

Slow Cooker Vegetable Beef Soup

Ingredients

Ingredients

  • 2 lbs. ground beef
  • 1 medium chopped onion
  • 6 - 14.5 oz. cans of mixed vegetables drained
  • 1 large can of tomato juice
  • Seasoning Salt
  • Pepper
  • 2 large bay leaves

Instructions

Directions

  • Brown ground beef with chopped onion, a generous sprinkling of seasoning salt and pepper.
  • Drain the fat when you’re finished and put ground beef into your slow cooker or Crock Pot.
  • Add each can of drained mixed vegetables and the large can of tomato juice. Stir well.
  • Add the bay leaves in separate places, or separate ends of the slow cooker.
  • Set your slow cooker on high for four hours, longer if needed. From my observation, the longer it cooks the better.
  • Don’t forget to take out the bay leaves before serving.

Notes

This easy vegetable beef soup is good with crackers, but great with, my favorite, cornbread or grilled cheese sandwiches. My kids also like to add shredded cheddar cheese to their soup. I like it just the way it is and it’s delicious.
