Sort through the beans. Take out broken or very discolored beans and rocks. (Yes, I've found rocks in my beans before, this is why I sort them now.)
Put beans into a colander and wash under cool water. Then, add them to the Instant Pot.
Slice or dice celery and onions and add them to the pot. (The size of the pieces is entirely up to you. We slice celery about a 1/4 in. thick, but dice the onions so they aren't detected by our small humans.)
Add the entire can of Rotel Tomatoes to the pot, juice and all.
Add water. The beans need to be fully submerged plus more water. (Approximately 8 - 10 cups.) I add enough water to come just under the MAX line in my 6 qt. Instant Pot.
Close up your Instant Pot and set on high pressure for 75 minutes.
When the timer goes off, release the pressure and serve.
